Manufacturers description “ Imagine a fall harvest with apples picked fresh and carefully selected to create a flavoursome apple cider.”
1 Day steep
Slight taste of a tart green apple followed by the typical fermented taste of a cider, although tart there is also an underlying sweetness and some spices to this, I’m unable to pick out the individual spices but I’m sure cinnamon isn’t one of them.
8 day steep
Increase in strength the Apple has become slightly tarter and increased in taste, the Cider taste has also increased in strength, this is more of a cloudy hard style cider including the typical cider spices (no cinnamon). The sweetness remains but not enough to push it away from the hard cider profile.
This is not dry it has the mouthfeel you would expect from a beverage style concentrate.
17 Day steep
No change.
Suggested Usage
I’d use an accent at 1%-2%, a background flavour at 2%-3%, a main note at 3%-5%.
Standalone 5%-8%
This will work well with some fruits especially other Apples, some beverage types and may work with some bakeries as a filling.
WF recommend – 6%-9%
