Light but sweet cream

This is still a light sweet cream bit has now developed a very slight chocolate note

This has now thickened up considerably to become more of a thick clotted cream type and has also developed a buttery note, the slight chocolate note is still there but has faded into the background, and this wouldn’t be noticeable in a mix at this %

Suggested usage

I’d use this as an Accent 0.5%-1%, Background 1%-1.5%, Main 1.5%-3%. Standalone 3%-5%

This would be useful as an accent to thicken up the mouthfeel of a mix and add a buttery quality to Bakeries, Biscuits, Cakes and Dairy. Used as a background note this will add some of that thick cream and buttery note, used as a main flavour this would give a thick and buttery clotted cream this would be useful for Ice Creams and Custards. I’d advise to only use the higher % range against strong concentrates or you run the risk of overwhelming them with cream.

I’d use with Creams, Bakery, Custards, Vanilla, Coffee, Dairy, Fruit, Nuts, Tobacco and Cheesecake.
